Something that has always bothered me about what they say about the size of galaxies.

Supposedly they are 10's of thousands of "light years" across.

If that's the case, then why do we see them as whole objects in the sky? Shouldn't they appear as smears if the light from the back part took 15,000 years longer to get here than the light from the front side?

no, the further objects just appear smaller

Because the light that got here from the back side left a long time before the the light that left the front side got here. It's not like the same light left both places at the same time and one had to "catch up" and caused motion blur.
